What You Need: Fresh Pineapple - I bought it pre-cut from Kroger. Fresh Blueberries - about half a container. 3 Roma Tomatoes 3 Vine Tomatoes 2 Orange sweet peppers 2 Yellow peppers 1 Red pepper 1 Bell pepper 1 Jalepeno 1 small onion 1/2 cup of cilantro 1/4 cup chopped basil 1 tbs minced garlic 1/2 cup lime juice 1 tsp salt 1 tsp pepper
How To Make It: Chop it all up. Including the blueberries. Pour lime juice over all chopped ingredients & add minced garlic. Let sit in the fridge for around 2-3 hours.
If you like your salsa chunky, like me, just start eating it. If you like it like a sauce, put it in a food processor and blend until you get your desired consistency. Season to taste. This stuff pairs great with fish.
